PROCREAM

The process results in an undenatured whey protein that is highly soluble over a wide pH range and has a very clean, bland flavor. It provides an excellent nutritive value protein for a variety of applications, including processed foods and functional foods.
LACTOSE
Manufactured through the crystallization of permeate from sweet dairy whey. It is a non‐hygroscopic, free –flowing and clean flavored powder containing greater than 99% carbohydrate (lactose) levels.
Lactose can be used in infant formulas, bakery products as well as in confectionery applications, drink mixes, prepared foods, snack foods, spice blends and in certain ice cream applications. Lactose is commonly used as a replacement to sugar in a number of food products.
DEPROTEINIZED WHEY
Manufactured through the cold ultrafiltration of sweet dairy whey, removing a portion of the protein from sweet whey to result in a non‐hygroscopic, free – flowing and clean flavored powder containing greater than 80% carbohydrate (lactose) levels.
Deproteinized Whey can be used as either a replacer for sweet whey powder or lactose, depending on the application such as, in bakery products to impart better browning, as well as in confectionery applications, drink mixes, prepared foods, snack foods, spice blends and in certain ice cream applications as a sweet whey replacer.
